Ingredients

  • 1 cup (225g) unsalted butter, softened to room temperature
  • 4 cups (480g) powdered sugar, sifted
  • 3 to 4 tbsp heavy whipping cream
  • 2 tsp pure vanilla extract
  • 1/4 tsp fine salt

Equipment

  • Large mixing bowl
  • Hand mixer
  • Rubber spatula

Method

  1. Place the softened butter in a large mixing bowl. Beat on medium-high speed for 3 to 4 minutes until the butter is pale, almost white, and visibly fluffy. Scrape down the sides once during beating.
  2. Set the mixer to the lowest speed. Add the sifted powdered sugar one cup at a time, mixing on low after each addition until the sugar is fully incorporated before adding the next cup.
  3. Add the vanilla extract, fine salt, and 3 tablespoons of heavy cream. Increase the speed to medium-high and beat for 2 to 3 minutes until the frosting is smooth, silky, and noticeably lighter in texture. Scrape the bowl and beat for another 30 seconds.
  4. Check the consistency. For piping, the frosting should hold a firm peak. For spreading, it should glide off a spatula smoothly. Add the fourth tablespoon of cream if a softer consistency is needed, or add another 1/2 cup of sifted powdered sugar if stiffer.
  5. Use immediately or store covered in the refrigerator for up to 2 weeks. Re-beat before using after refrigeration.

Notes

  • Butter must be genuinely soft, not just surface-warm from the fridge. It should hold a clear thumbprint without feeling cold inside.
  • Always sift powdered sugar before adding. Unsifted sugar creates gritty lumps that don't dissolve no matter how long you beat.
  • Beat butter alone for 3 to 4 full minutes before adding anything. This step determines the final texture of the frosting.
  • Add cream one tablespoon at a time and stop when you reach the consistency you need. It's easier to loosen frosting than to stiffen it back up.
