Three stacked brown butter chocolate chip cookies with crispy edges and chocolate chips on white plate on dark wood

Brown Butter Chocolate Chip Cookies

Butter browned to an amber, nutty state, combined with brown and white sugar, egg and extra yolk, then folded with flour and chocolate chips into a thick, glossy dough. Baked at high heat for crisp caramelized edges, chewy fudgy centers, and a brown butter flavor that ordinary cookies don’t have. Makes 18 to 20 cookies.

Ingredients

  • 170g (3/4 cup, 1.5 sticks) unsalted butter
  • 200g (1 cup packed) light brown sugar
  • 50g (1/4 cup) granulated white sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 teaspoons pure vanilla extract
  • 220g (1 3/4 cups, spooned and leveled) all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon fine salt
  • 280g (1 3/4 cups) semi-sweet chocolate chips or a mix of chips and chopped dark chocolate
  • Flaky sea salt, for finishing

Equipment

  • Light-colored saucepan
  • large heatproof bowl
  • whisk
  • Spatula
  • parchment-lined baking sheets

Method

  1. Cut butter into pieces and melt in a light-colored saucepan over medium heat, swirling occasionally. Cook 4 to 6 minutes until the foam subsides, the milk solids turn deep amber, and the butter smells like hazelnuts or toffee. Immediately pour all the butter and amber milk solid specks into a large heatproof bowl.
  2. Add both sugars to the hot browned butter. Whisk vigorously 60 to 90 seconds until incorporated and smooth. Let cool until warm to the touch, 5 to 8 minutes.
  3. Add the whole egg, extra yolk, and vanilla. Whisk for 60 seconds until smooth and glossy. Rest 30 seconds, whisk again 30 seconds. Repeat this cycle a total of 3 times over 5 minutes.
  4. Add flour, baking soda, and fine salt. Fold with a spatula using broad strokes until no flour streaks remain; stop immediately once incorporated.
  5. Fold in the chocolate chips until evenly distributed. Preheat oven to 190°C (375°F).
  6. Scoop 3-tablespoon portions onto parchment-lined baking sheets with 6cm spacing. Press 2 to 3 extra chips on top of each. Add a small pinch of flaky salt to each.
  7. Bake one tray at a time on the center rack for 10 to 12 minutes until edges are golden-brown and set but centers still look slightly underdone and matte.
  8. Remove from oven. Immediately bang the tray once firmly on the counter to deflate the centers. Rest on the tray 8 to 10 minutes before transferring. Centers will set fully during this time.

Notes

  • Use a light-colored pan for browning butter; dark pans make it impossible to see the milk solid color change.
  • Include every amber milk solid speck when pouring the butter into the bowl; they carry all the brown butter flavor.
  • Pull cookies when centers look underdone; they set fully on the hot tray during the 8 to 10-minute rest.
  • Dough can be chilled for 30 minutes to 3 days for improved flavor; frozen dough balls bake from frozen at the same temperature with 2 to 3 extra minutes.
